Though there is little teaching on how to immediately transition into counterattacks when escaping, you won't find a more comprehensive guide to escaping bad positions in bjj. Lachlan is a master escape artist, and this instructional shows you how to become one as well.

Would recommend this as the first instructional to anyone starting out in jits. Escaping and surviving bad positions is probably the first skill to learn in jits considering you'll be getting your butt kicked as a beginner often. As much as I love the new wave approach to escapes (straight into counter offence), I feel this instructional much better suited to beginners and with enough detail to carry you through to higher belts. This covers every position, in gi and no gi, and from memory while it doesn't specifically cover submission escapes it does also come with help remaining defensively responsible to help avoid being subbed while you work out of these positions. And as always, Lachlan's thesis of an instructional is once again super low in price and high in value. Get this.

This is a very good video, covering a lot of escapes from each position and the key details that make them work. Good for beginners especially, but may also contain some details more experiences grapplers hadn't picked up on or had forgotten

This instructional is highly informative not just about escapes but Jiujitsu in general. I have watched it many times and I always learn some new detail that improves my game. Lachlan is a great instructor and you can't go wrong with this instructional.
